Reubens

After seeing something about Reuben sandwiches on Mrs. Degenhart’s facebook… I got a hankering for them. So I did some research on Reubens and put the ingredients on my grocery list and headed off to the store to get them so we could have the delicious Reubens this week. I’m not sure delicious is a strong enough word for these sandwiches, y’all! Seriously these Reubens were like mouth watery! soo good! Doesn’t your mouth water just looking at it? Mine does!

Ingredients:

Rye Bread
Corned Beef
Muenster Cheese
Mayonnaise (you can use Thousand Island if you like that)
Sauerkraut
Butter
Iron Skillet

Directions:
Take your rye bread lightly butter one side, then on the other side put mayonnaise. Lather on as much as you can stand… mine was lightly. Then put the corned beef on the mayonnaised rye, then the sauerkraut, then the cheese. You can layer them as high as you want. Then spread mayonnaise on one side of the other slice of rye and put it on the sandwich. Butter the outside and put the whole sandwich in your hot iron skillet. Grill until the cheese melts and the rye becomes slightly brown.

That is totally it! Took me no time to make it and it was like phenomenal! :D

It’s kinda funny…  every time I hear “Reuben” I remember an old song I used to like and so I changed the lyrics to accommodate sandwich eating.The original goes: “Reuben, what does he thinkin’ he’s doin’?” and I changed it to “Reuben, its what I’m gonna be eatin’“. You have to hear the tune cause its hilarious… yes, I get a little crazy when there is food involved! shocking? nah ;)

So yeah… umm… they are really good and everyone should love them. :D

What Happened In The Year 2009

It’s hard to believe another year has passed. I must say that I am very glad to see 2009 go. This year was full of hardships and growing and joy and sadness.

What a year!

Ecclesiastes 3:11
He has made everything suited to its time; also, he has given human beings an awareness of eternity; but in such a way that they can’t fully comprehend, from beginning to end, the things God does.

I really am looking forward to where God leads me this year and what he teaches me. I look forward to the good and bad of 2010.

CcubedN

I don’t remember how I came up with CcubedN, but when I did everyone LOVED it and it is a family favorite. Its also quick and easy which makes it great for when the day gets away from you and you realize its after six, the kids are hungry, dad is on his way home and you haven’t made dinner. :D
CcubedN stands for Creamy Cheesy Chicken and Noodles. Pretty explanatory, eh?


Ingredients:

2-3 Chicken Breasts
1 6oz. package of Cream Cheese
1-1 1/2 cup Shredded Monterrey Jack cheese
2-3 cloves Garlic
2-16oz. packages of Rotini
1/2 cup Milk
a little bit of ranch dressing (my secret ingredient)

Directions:
Put the noodles in a pan of boiling water to cook. Cook the chicken all the way with the garlic, onion, and italian seasonings. Chop up the chicken into small pieces and put back into pan, adding in the Cream Cheese, Ranch and Milk. Medium heat til soft and creamy. You may have to add more milk to get the right consistency of creaminess. Keep on low til the noodles are done.
When the noodles are done, pour the sauce over the noodles, and stir well. Make sure the noodles are covered with the sauce. Put in a oven safe dish and shred some MJ over the top and bake for about 15minutes on 400′ or until the cheese is slightly brown and crunchy on top.
Serve with your favorite veggies. We had it with Chilli Corn Salad for dinner, but its also really good with Fried Green Beans too.

That is my own special recipe. Its simple and easy and cuts down on your time in the kitchen with is GREAT for me. ;)

Chilli Corn Salad

When we went on our HUGE 2008 Vacation, we got to stay with our good friend, Sprittibee and she made us a wonderful dinner that included an amazing Corn Salad. It has become a family favorite now… its almost addicting… :P

Ingredients

1 bag of frozen corn – thawed
1/2 red chopped
1/2 onion chopped
1/2 of a 1 lb. bag of sharp cheddar grated cheese
1 1/2 tbsp chili powder
3 tbsp Mayo or Miracle Whip
1 bag of frito corn chips
salt to season

Directions
Mix corn, pepper, onion, cheese, and chili powder well. Add in Mayo, but only enough to lightly cover everything, not drown. Crunch up the Fritos, and add right before serving or to each individual servings since the chips will soften.

A simple tasty salad that will compliment any dinner… we had BBQ chicken, mashed potatoes, and green beans with our corn salad last night. We had it with mexican when we went to Sprittibee’s house. It’s awesome with anything really! ;)

Spinach Pasta Salad

We try to make our lunches quick and easy. I was looking through some old menus and found our Spinach Pasta Salad recipe! :D We used to make this quite a bit, but haven’t had it for awhile, so I made it for lunch. It is so good!


Ingredients

16oz box of pasta (Rotini is the best)
6 cups raw spinach
8oz. shredded cheese
Dressing:
6 tbsp Olive Oil
4 tbsp vinegar (we use apple cider)
3 cloves of crushed garlic
3/4cup parmesan cheese
1 tsp salt

Directions

Cook noodles, strain and cool. tear up spinach a bit. Mix dressing and pour all over noodles and spinach. Add shredded cheese, mix and serve.
You can add more dressing as needed.

Simple and easy and doesn’t take very long either. Perfect for a last minute filling sidedish or light, yet filling lunch.

He’s A Posterboy! Review and Giveaway

One of my favorite school projects was when we had a International gathering, where different families from our homeschool group chose a country and did special things from the country at a booth and then we went from “country to country” to learn about them.
Our family did the country of Cambodia because at that time we were close friends with an older missionary couple whose life passion was to bring the Scriptures and knowledge of the Savior to the Cambodians. It was such a learning experience for us because we got to sit down with the missionaries and hear them tell us all about the country and people and such. We took notes, studied the country, learned what Cambodians did and didn’t do, what was different about them than us, etc. We all picked something specific about Cambodia and wrote a paper on it. I think I did food… big surprise, huh? :P We also made a Cambodian flag and 3D type map of the country on poster boards. It was really cool!

I absolutely LOVE Carolina Pad products and when I heard that their Ghostline company was needing reviewers for their poster boards, I jumped at the chance and promptly signed up. :) I don’t know why now, cause my creative juices are all but lacking in my body. I kid you not. So try hard not to laugh at this project I came up. :P

I figured that was the MOST important thing in my life right now and the biggest thing that happened in November, so it was fitting to use the products for it. :D btw… if you notice the visitor log is lacking… ;)

Overall thoughts on the products: WONDERFUL! They are really nice, quality paper and poster boards. Great for homeschoolers.

All of the products from Ghostline have grid lines so it makes it easy to draw, write, cut, etc. That was definitely nice when I was lining up the letters on the board. But the gridlines are so faint that unless you are up close to the board you can’t seem them which is great!

Project paper is sturdy, yet pliable, so you are able to cut it and bend it easy for those hard to reach areas, like the middle of this A:
It is also very absorbent paper. I used a marker to get the blue “IT’S A BOY!” letters and it didn’t smear which I was surprised since its a little glossy.

One thing I didn’t really like was the way the letter stencil separates the letters, but I guess that’s how all stencils are. Still it made it difficult to get the letters to look “normal” instead of garage sale-ish.

The poster foamboard itself… very sturdy! Very easy to stand up and keep up. It really supports itself.
It is also thin, yet thick enough to use pins in. I actually pinned the hats, booties, and blanket on the poster board and it held wonderfully and stood up too!

These products are quality products that are so easy to work with. I would recommend them to anyone who has a poster board project to do. Another awesome thing about Ghostline is that you can get their products at Wal-Mart, so you don’t have to order them online if you need them asap! I was pretty excited when I was at Wal-Mart a couple weeks ago and I saw their products! :)
