It’s hard to believe another year has passed. I must say that I am very glad to see 2009 go. This year was full of hardships and growing and joy and sadness.
I try throughout the year to keep an account of happenings which is sorta easy to do with my blog, Twitter and Facebook.

Today, October 26th, is the anniversary of the birth of my first child. I can’t believe it has been 20 years since that day. I can’t say anything more than I love her today as much as the first time I held her in my arms. I love her giving heart, her beautiful smile and all she means to me. She is precious to me and to Yehovah, and I am so grateful she is in my life.
I love you Amanda.
I hope you have a super day today.
I hope we grow closer this year than we have before. (Can’t believe this photo is a year old already… we need a new one together!)
I hope you are blessed more this year than you ever have been and walk closer with Yehovah and Yehoshua than you ever have.

So last Friday I was making our Shabbat meal and had gotten the lasagna in the oven to bake and realized I hadn’t done anything for dessert! :O
I looked through our pantry and fridge… not a lot to work with, then I saw the fresh pineapple and the whipping cream. Surely I could make something with those together, right? :/ yeah me either… but I figured there had to be some type of frozen dessert that I could create with those ingredients… so I did some searching, mixed some recipes I found and came up with this…
I call it Tropical Freeze. and here is my recipe:
Filling:
1 1/2 c. sugar
4 eggs
8 tbsp. butter
2 pts. whipping cream, whip real good
2 c. crushed nuts
4 c. crushed pineapple (drain good)
3/4 c. raspberries
1/4 c. coconut flakesCrust:
2/3 c. brown sugar
3/4 c. flour
3/4 c. oats
3/4 c. Tropical Traditions virgin coconut oil
(the consistency needs to stick together, but not wet.)Beat sugar, eggs and butter. Drain pineapple. Whip cream.
Mix egg mixture, pineapple and nuts in large bowl then add whip cream.
Pour into 9×13 inch dish which has been lined with crust. Save a small amount of crackers to put on top of whip cream. Make about 1 – 2 hours before using. freeze.
It turned out pretty good. Only thing, I didn’t have 2pts of whipping cream and since I was using a fresh pineapple, I didn’t drain it. So it was runny, but once we froze it, it was ok. 
It’s kinda like a frozen smoothie!
Tropical Freeze is really refreshing and flavorful. It’s really good! See?
